I like most of the suggestions but, unless I've missed it, no one has focused on a very important point. The crust - the shortcrust pie pastry - must be right or the whole thing fails.

Yes from me. The Balti pie at Walsall social club was spot on with soggy chips n beans. The one I had at County was too dry. Please note.

I had the pasty at County - the crust was Ok but the filling not that good. For a top pie or pasty, both elements must be spot on.
