Just a little bit pink. This invariably presents problems, as restaurants regularly misinterpret it and undercook it. I had a 12 oz fillet last week that shrieked when I stuck my fork in it.

Tee-hee. That was one of my favourite ways of embarassing twathead blokes trying to impress a lady when I worked at The Grand.

It was amazing how many of them answered the question "And how would you like your steak tartare cooked Sir?"

Oh, and my personal preference - medium-ish. don't mind pink but the moment I see blood it gets rejected.

Anyone that says Well done is sat at home in thier caravan dressed in a tracksuit and baseball cap thinking that Pizza hut is a 'nice Italian' and that going out for a meal involves a Big Mac. No Taste buds I tell you!

Medium/Rare, but would add the caveat that I won't eat steak in England, most chefs cook to oblivion and the quality of the meat is generally lousy. Scotland on the other hand, for all its faults and dodgy cuisine, does produce some good steak (Aberdeen Angus) and is well worth eating.

My opinions have been coloured by spending time in both North and South America where the steak is generally so good that it melts in your mouth and has a flavour to die for. Argentinians may not have been much good at defending the Falklands against the pride of the British Armed Forces but they know how to raise the best beef cattle in the World.
