I did roast duck yesterday it was an organic one from Archers and was lovely but I don't have the culinary knowledge to know what to do with the giblets.
I have a bag with the neck, liver, kidneys and other innards (maybe it's heart?)and I don't want to just chuck them out but I'm not sure quite how to use them to do them justice. The best I've seen so far is to make stock but I thought kidneys and liver would be overpowering, any ideas please?
Not a great fan of offal but I don't like wasting food either.
