I did roast duck yesterday it was an organic one from Archers and was lovely but I don't have the culinary knowledge to know what to do with the giblets.
I have a bag with the neck, liver, kidneys and other innards (maybe it's heart?)and I don't want to just chuck them out but I'm not sure quite how to use them to do them justice. The best I've seen so far is to make stock but I thought kidneys and liver would be overpowering, any ideas please?
Not a great fan of offal but I don't like wasting food either.

I probably will do that but I feel it's a bit of a waste, I'd prefer to chuck them in a river or the sea for fish to feed on or leave them out for the gulls rather than just stick them in a bin bag that might not be collected for another two or three days, they'll stink the street out.

Treat your dog or cat to them? Personally i find the giblets disgusting BUT if you do want to use render them into fat and cook with garlic,onion,curry powder.Anything that gets rid of the taste IMO.

i got the icy stare and the MEN useless line when i purchased a capon WHITHOUT the holy giblets inside,what do you want giblets for then ,i asked, well the cat loves them was the reply, our cat is 4 months old and has never seen a giblet in its life! How does she bloody know the cat loves giblets ? ? kyn wimin

Thanks for the tips, wont be taking them to Withdean, I don't hate the stewards that much.
I boiled them up with some carrots that were on the floppy side but ok and an onion chopped up smells very strongly of kidneys and looks a bit green.

Cook them in slightly salted water, and use that as a basis for some gravy.

When I have giblets I put them in with the bird (usually chicken), and roast them, then leave them in the tray as I make gravy (using the water from the veg).

If you're really daring, you could use the liver for pate.
