Where does pizza cheese go overnight?

Last night, succulent, moist pizza covered in lashings of cheese. This morning, having just reheated the remaining two slices, all the cheese seems to have disappeared, and been replaced by a thin, chewy membrane barely holding the pepperoni on.

Why does this happen?

No nuke, used the oven. Nuke makes crust soggy, and that won't do.
