I find chicken is often too easy to become dry, although it can be very satisfying if cooked well.

Pork with crackling is simply lovely, absolutely perfect.

For me there is no comparison to Rib of Beef cooked on the bone and then served with Horseradish . Home made Yorkshire Pudding, Roast Potatoes Runner Beans Cauliflower Cheese, Roast Parsnips, Carrotts and Peas and good thick gravy.
