EITHER the third or fourth option.

I had a vegan 'ham' sandwich (quorn slices).

I'm not a vegan or even a veggie but generally try to avoid processed meat, and the sandwich options are then pretty limited.

The meal midway through the day is LUNCH. That's why its called LUNCHTIME.

Dinner / Tea are interchangeable as the evening meal in my world. (Unless you are going OUT, obviously - nobody goes 'out to tea').

I've been out for a cream tea at our local farm shop (not today). Scones jam and cream (jam first)

Lunch today was chicken soup, with a slice of wholemeal bread for dipping, packet of Baked Cheese & Onion crisps, a banana, mandarin and a pear.

I cook the dinner, so I engineer the quantities.

Same. I'll always cook more than is needed so I've got stuff for the next day either to heat and eat or to be revamped into a new dish. Leftover cold rice becomes fried rice the next day. Extra spaghetti becomes a frittata di pasta.

Saves on bills and time.

Cauliflower cheese, pasta salad, grated carrot, tomatoes and cucumber, rice salad, potato salad, beetroot and coleslaw.

And a glass of orange fanta.




….the cottage pie is almost ready, I’m still a bit full…..

Been told by the doc to get my cholesterol down so today was a typical entry into my new regime;

Salad of..

Beetroot
Spinach
Leaves
Radish
Sweet red pepper
Grated carrot
Mixed seeds
Drizzle of extra virgin olive oil
With Turkey breast and a glass of water .

I enjoy this one. Rather big lifestyle change for me though. While I exercise daily, I have always been known as a non-stop eater, so it’s like a personality change as well as a dietary one.
I’d regularly have 4 eggs every day for breakfast, huge sandwich eater, crisps, baked potatoes with egg mayo, two or three fry-ups a week, burgers, roast dinners etc. I never stopped eating.

And as a result, cholesterol has caught up with me in my forties .


Frankly I was relieved not to have diabetes. I knew I was pushing my luck so I’m really making an effort.

Cheese is now a rare treat for a couple of times a year and 1 egg a week though :-(
