The same thing as when you counter-attack. You "fanny around at the back" because you want to invite them to pressure you so you can play 4v5 or 5v5 in the opposition half rather than 4 or 5v10. When you win the ball in a phase where they are moving forward, you already have that situation and there are more opportunities to play it quickly.
