I know lot's of other things have been suggested but how about a filmed Race Night? For those of you that have never been to one, you have 8 horse or dog races - all with 8 runners. There is no form or odds - you just buy tickets at, say 50p or £1 each. The total prize money is split 50/50 or 60/40 and payouts are Tote style. (The less tickets that were bought, the more the win per ticket.)
This would need a willing pub with a large screen TV or projector. DIY kits for a Race Night can be bought for £99 or I could burn DVD's myself (Not sure how legal this method is). Pubs have no problem hosting these nights as they are classified as a lottery.
According to one website, having 70 people betting £1.50 per race can make up to £1000 "profit" which wouldn't be bad. (Other initiative's such as sponsoring races or having auctions to "own" a horse can increase this further)
It's too soon to arrange for next Monday's meet up but what does everyone think?
