i do it by separating the yolks and whites. Whisk the whites until fluffy. Mix the yolks with a splash of water. Then fold the yolks into the whites.
Melt butter in pan. Add whatever else you're putting in. Pour in folded yolks and whites mixture. Cook until underneath done. Brown the top under the grill, so doesn't flatten by turning. Remove from pan and scoff.
