When I did it last I just did what I felt was right rather than follow a recipe and I think they were quite nice. Not sure if I did anything which is a "no no"

Lightly floured the Liver also seasoning at the same time.

Light fried them (hardly any oil). Took them out.
Fried the bacon and onion on a high heat then added some wine and reduced that (for about 30 seconds), added a dash of cream to almost create a sauce.
Chucked the liver back in and done.

To be fair, anything tastes nice with wine, cream and pepper so it was just a spur of the moment thing.

Crucial that is undercooked rather than over. A little bit of bleed is fine. What time are you dishing up :drool:

Intentional, given the reference which may be a little old for you. If I was going to eat [MENTION=97]Toronto Seagull[/MENTION] 's liver I'd have done it while we were in Tokyo where it had been nicely fattened by sushi, yakitori and gin.

I can highly recommend a recipe in the recipe section of BBC Food website 'Liver Veneziana' - simply orgasmic (its a Janet Street-Porter recipe but dont let that put you off !!)

Liver Veneziana
Ingredients
3 mild onions, peeled and very finely sliced

3 tbsp light olive oil

salt and freshly ground pepper

40g/1½oz butter

8 thin slices of calf's liver, cut into small squares

1 tbsp chopped parsley

2 tbsp wine vinegar

Preparation method
1.Over a low heat, fry the onions in the olive oil until they are coloured and very soft - this can take up to 30 minutes. Season with salt and freshly ground pepper, and tip into a bowl.

2.In a frying pan, heat the butter until foaming. Season the calf's liver with salt and freshly ground pepper, and briefly cook the meat in the butter for about 20 seconds. Transfer to a colander and drain.

3.Tip the cooked onions back into the liver pan and toss briefly until they are golden brown and slightly scorched.

4.Return the liver to the pan with the parsley and finally stir in the vinegar. Serve.

I often have liver just fried quite lightly adding it lightly to a shedload of finely chopped onions fried until they have caramelised - about 20 mins. Recently though, out of sympathy for my poor girlfriend who finally said that cutting up so many onions was making her cry, i've taken to cutting them up myself. I can only think that the sight of me crying reduces her to tears as well (understandable), because it doesn't seem to have made a blind bit of difference to her.

Grill the bacon until crispy.

Take the the liver, wrap it in foil, and throw it in the bin. (the foil reduces horrid liver smell).

Slap the bacon between two slices of bread.

Sorted.

One of my faves. My Mrs doesn't like it either. So agreed, make while you can (I make enough to freeze a bit). I have started tossing some kidneys in with all the above.

Liver and Bacon or Liver and onions was always very popular in the pubs because invariably in most families 1 person likes it and the rest dont so it is not often cooked at home. I love it fried or grilled but cannot stand liver if cooked in gravy in the oven for a long time.
