I know some people keep their tommy ketchup in the fridge, but I don't understand why - it's a vinegar based commodity, so wouldn't go off in 10 years if left out. So, why would you.

This is the level of my thought processes for today. They will get no deeper than that.

This really seems to divide people. Our house can't settle between the two for some reason. Cold ketchup on a hot chip can be nice.

Because it says "Refrigerate after opening" on the label...

Or at least mine does.*

*Technically, mine says: "Na opening koel bewaren (max 7°C)" - but the effect is the same.

My bottle of Heinz carries the instructions " After opening, refridgerate and consume within 8 weeks " ... could that be why we do it ?

I NEVER put ketchup in the fridge. Or mayonnsaise. Or any condiment, come to think of it. It just doesn't seem right putting something fridge-cold on hot food.

Condiments on hot food should be at room temperature. Without exception.

I would only ever buy Heinz (unless i make my own), but have never read the label. Anyway, that's just a legal disclaimer, I can't see the contents deterioating for a long, long time.

Disagree.

You're hungry. Out come the chips, smelling gorgeous, all ready to eat you think. But NO, they're really hot. What are you going to do? I know, stick some COOL condiments on them. Balances it out perfectly, LOVELY.

There may be some ketchup debate, but an egg-based product like MAYO is surely non-negotiable? Are you trying to KILL yourself?

Warm mayo? That's a DISGUSTING thought.

I concur, nothing better than a nice hot sausage roll with a thick stripe of cool ketchup along its backbone

And then they're COLD before you know it. Just douse the chips with some room-temp vinegar and/or ketchup or mayo, and give a little BLOW. The chips will soon be comfortably edible, and will remain at a satisfyingly warm temperature for the duration of your scoff. Pile a load of ice-cold sauce on them and before you know it the whole lot will be cold, meaning you have to PLOUGH through them like some kind of tramp before they become inedible.

Well, I'm still here. Mind you, I cuffing LOVE mayo, so a jar doesn't tend to last too long in my cupboard anyway. I put it on almost everything (and I make a lot of tuna).

I would think manufactured mayo would be perfectly safe (not that I buy it, I make my own). Salad Cream is made with cooked eggs, so no problem.

I'm with Easy on this. None of these products used to say refigerate after opening, it has only come in since everything went health and safety mad.

You clearly put more sauce on your stuff than I do. Doesn't make the whole thing cold at all, and the whole point of using the cold condiment is so you can eat it STRAIGHT AWAY, ie the chips/whatever are PIPING HOT, so no chance of it going cold before I'm finished. Joyous times. Hot food is at it's best PIPING HOT, so if something enables you to eat it then, you ruddy should.

Consume within 8 weeks? That's just a cynical money-making scheme.

The Heinz website says:

"Q: Do I need to refrigerate Ketchup? A: Because of its natural acidity, Heinz® Ketchup is shelf-stable. However, its stability after opening can be affected by storage conditions. We recommend that this product, like any processed food, be refrigerated after opening. Refrigeration will maintain the best product quality after opening."

Fridge.
