[Food] Sandwich/roll fillings

The most curious thing..
1). Cheese and dates;
2). Tuna and cucumber;
3). Processed peas;
4). Cheese and onion crisps.
5). Watercress, tomato, salt and pepper.
6). Fried egg.
7). Scrambled egg.
8). Chips.
9). Blackcurrant jam.
10).Mustard and brown sauce.
All on the same sandwich !!!

Brown granary roll, with blue stilton and a homemade chutney.

Possibly with some cucumber on the side to freshen the mouth.

And a pint...

Back when I first started working there was a sandwich shop in Air St just near The Quadrant that used to do an absolute slab of doorstep bread, slathered in enough melted cheese to bathe in and topped with caramelized onions. It truly was a thing of beauty. I've never seen its like again.

Then, when working later in The City we discovered both the Birley's Hot Special and a place that did a roast dinner in a baguette. I'm honestly drooling thinking about it.


In the absence of both, at home, during lockdown, it's chicken and crispy bacon, tossed in mayo, with Iceberg Lettuce on thick granary.

Thanks for this memory.

That sandwich shop in Air Street was the best - I can still remember their cheese and onion toasted sandwiches and their ham and coleslaw with enough coleslaw in it to feed a medium sized country - yum.

Before Air Street was knocked down and rebuilt to look exactly the same as it was before the same shop was run by a Thai guy for a while doing really good Thai Curry's (although he would pad it out with a lot of rice if he was running low on the curry).

Another fan of 80's Air Street sandwich shop. I loved their coronation chicken doorstep and the Egg mayonnaise was the creamiest and most indulgent egg sandwich I've ever had. I remember they were really good value.

Air Street was one of my favourite streets in Brighton. Close to Virgin Records, that derelict church selling "antique" tat, Punk/Mod clothes shop opposite the most delicious sandwiches and the Quadrant. Good times.

Dense, crusty ftira bread or sliced Maltese bread
Good quality tomato paste (known in Maltese as kunserva)
Capers
Chopped Onions and garlic
White Anchovies or tinned tuna in oil, drained
Sea salt and pepper
Flat leaf parsley, leaves picked
Extra virgin olive oil

I had liver sausage and cucumber today on white (obvs) as an 80s throwback, with a modern twist...added some gherkins. Very very nice!

Next week: Sandwich Spread!

Did you find the 80's liver sausage in Dad's fridge?

This reminds me of those small Italian sandwich shops in London where they have all sorts of mixtures like this in oval metal dishes under the glass counter. I miss these.

Since I found I was gluten and lactose intolerant....I can eat bread only that tastes like cardboard, but it toasts reasonably well and I'll have some melted lactose free cheese under the grill, with garnishings, but it isn't a sandwich. It's a sadwich. Never again will I enjoy tuna, mayo, salt and pepper and thin slices of tomato on a wholemeal bun. Never. The b'stards! (genes). :rant::angry::facepalm:

You must love Subway then. Half a dozen breads to choose from and not one of them that tastes like bread. And speaking of Subway, does anyone else remember Capt Submarine in the 80's in whatever that street's called opposite Brighton Town Hall? Foot-long Sub was to die for, least it seemed like it at the time. Seemed to unleash a whole world of roll-based possibilities in that bygone era when even things like garlic and olives seemed impossibly exotic and sophisticated. Suspect it may not have stood the test of time too well tho :lol:

I had a wonderful one yesterday- chicken thigh, lettuce, tomato mayo in a wholemeal baguette. But was it better than this morning's fried egg, chard and sriracha bap? Will both be overshadowed by the pork knuckle bao bun I'm planning to have in a few beers time?

The possibilities are endless- how could anyone choose just one?
