I know you folks of NSC love a good debate so here it is,

Do you add red wine to spaghetti bolognese when cooking?

Or do you not?

Wino family here, we add wine to plenty of winter dishes and white wine to risotto. In fact there is nearly always a bottle of cheap red wine beside the hob, exclusively to add to dishes :smile:

Red wine yes and important to use a good quality beef mince . I would recommend an Aberdeen Angus steak mince - lovely rich taste . It’s around £6 for 500gms from Waitrose . The Organic equivalent is dearer but I don’t think you need organic for beef as long as the beef is good quality.

For chicken I would go organic .

The first time we took our youngest abroad, we pushed him in his pushchair down to the local restaurant, ordered, fed him, and then realised we had forgotten his favourite dummy. It seemed, that when pushed, he preferred a Rioja cork :blush:

Yes enhances the flavour and colour.

We've used a bit of milk, as it makes the sauce creamier.

And of course you need red wine in it. What sort of neanderthal would cook it without? May as well leave out the seven cloves of garlic and only cook it for half an hour.....

Agree with Live by the sea that the mince is really important. Cheap stuff means you have to drain off all the rancid oil/water and leaves the residual meat with no taste.

You don't have to pay big money though. We get proper steak mince from the local butchers for less than you'd pay for the "good" stuff in the supermarket. No fat, no water, cooks perfectly.

I'm ****ing hungry now.

Perhaps the most important non standard ingredient is milk. Carluccio's recommendation and it really makes a difference.
