Maybe this has been covered before but I haven't seen it.

I have a surplus of roast pork left over from Saturday night.
I made some gavy from the juices in the pan and did a load of roast roots etc on Sunday & heated up the cold sliced pork in the gravy, very tasty.
Last night was so lovely we sat in the pub garden and got gently bently and didn't really do a proper meal.
Today I have got roast pork, gravy and mustard sandwiches for my lunch.
Still lots of pork left despite us picking at it between meals.

I think it is it still ok to use but not certain what to do with it, I hate wasting food but don't want to give my missus the thruppenny bits.

So, can anyone recommend a recipe please so I can use up the pork (about 3/4 lb maybe more) and take it to work maybe reheated in a microwave oven?
I'm reckoning on getting two meals out of it.

It was cooked on Saturday evening and has been kept in the fridge so has not been reheated.

At work so wont be able to view any suggestions til later, thanks in advance.

there's always a stew or curry if you want to take it to work and reheat.

Or you could make up some batter and do pork balls, or pork nuggets.

I usually stick it in a thai green curry or soup

I usually chop it up into little cubes and lob it in a stir fry (with whatever stir-fry type veg you've got - but pak choi and unsalted cashews are favourites) and stir-fry type sauce.

Serve with those Uncle Bens Microwaveable Rice (perfect in 2 mins). Easy peasy. Tasty no wastey.

Thanks for the ideas.

I'm liking the chinese/ stir fry style so as to get some fresh greens in there somehow but I have just remembered that work are having a hog roast tomorrow as a send off to some American colleagues so I might have to do a stew/curry thing and freeze it.

That is what I would do with it as I do not like Pork in a standard Indian type curry.

why not treat the seagulls, foxes etc ..go throw it in a park somewhere.. im sure your sick of the sight of it !!!

Cold pork, jersey royals or new potatoes, coleslaw, salad (beetroot, iceberg, cucumber, cherry toms etc), hard boiled eggs and lashings of butter on pots and pickle
