Turkey is far too dry although we haven't decided yet. It's either that or chicken.

The problem with turkey is people overcook it, which is exacerbated by the fact that the legs take longer than the breasts.

I reckon the best thing to do is remove the legs, bone them, and stuff them. Then you can cook the crown and stuffed legs until both are just right.
