Gotta love a kipper. Craster or Loch Fyne please!

If your'e in Northumberland, track down the Old Ship Inn at Seahouses where Craster Kippers are best served with brown bread and enjoyed with a pint of Theakston's Best Bitter. Bloody marvellous and no burpy repeats.

At home, put them head down in a jug, pour boiling water over them and leave for six - ten minutes - no more. Shake or pat off the water when you take them out and put them on hot plates with poached eggs and brown bread and butter.

the boiling water method is best but people dont do it properly.
My mum was from the outer Hebrides and cooked them perfectly with no smell

use the boiling water method, make sure the tails are at the bottom in the boiling water, slice the tail in the middle with scissors about a one inch cut should do it, the odour of the kipper will ooze out naturaly into the water and not be a problem as their smell comes from the back end and not the head

Saw one water skiing once.

A few showing from the Marina in the last few days before the blow, charter boats getting them just off a bit, they are getting bigger in numbers slowly.

Sure you are not referring to a Bloater with this method ? a Kipper is split and all the guts and roe removed pre brining and smoking, Bloaters are brined and smoked whole with the guts in and they need removing before cooking.
