Well, it always used to be the Hickstead Hotel just off the A23 at the Burgess Hill exit. My missus worked there and wrote to all the clubs each summer that Brighton were playing. Most / many stayed there but this was 2000 / 2003 so maybe things have moved on. It was ideal as it was out in the sticks / quiet and with easy access via a 20 minute short trip to the ground.

When we came down to watch Birmingham at the Amex last season we stayed at the Grand....and so did the Blues players!
