Unfortunately I have to put up with the Mexican Christmas Eve version of a very late dinner, but at least have got the wifes family to start Christmas dinner before midnight....starter is the only thing she cooks all year (but very well) and it is always Bacalao a la Viscaina, which does lay a good base and washed down with some decent white.
