The main reason is to help melt the cheese but steaming also softens the bun a little. Just before the end of cooking you top the burger with cheese, bacon, etc (not salad and sauce) and put the top part of the bun on top. You then put the dome over the top and squirt in a small amount of water to create the steam.

Thanks for that as I thought that perhaps you cooked the burger using the dome as a form of lid to cook it and retain the heat to ensure it was cooked in the middle.

FWIW, having contributed at the start of the debate, a burger is definitely not just a burger, there's a huge variety out there. Also the current fad for street food and dirty food over here is just a fad here. Lots of other countries have traditions of small places selling excellent tasting snacks that you can eat on the go. At a push you could make a version of any of them at home but you could never beat the best. I'm confident that the home made burgers I make on the BBQ in the summer are better than Uncle Sams. I'm also confident that the burger I had at Burger Brothers isn't just the best burger I've ever had, it ranks as one of the nicest things I've eaten ever. It's obviously not a whole meal and the ambience is just sitting on a plastic chair getting the sauce all over your fingers, but as an individual component it is made with skill and love. That's what counts in the end.

So where would people recommend a novice burger eater (McDonalds or Burger King) should try without paying an extortionate price, in the Brighton area.

You don't HAVE to like burgers, if you don't you know. I can't help but feel you're probably going into this with the wrong attitude / perception!

BG - I recommend trying either Burger Brothers or Brighton Burger - both are very central and from both you can get an excellent quality burger for under £7.

I would consider £10 to be the maximum for a burger irrespective of what it is made with.

Troll's Pantry is good and is about £8 for a burger (just a burger, no chips). They are under the arches underneath Brighton station.

Burger Brothers are a little cheaper (starting at £6.50) and better in my opinion. They're towards the bottom of North Road.

I have been to Burger Brothers just the once sadly, but i can heartily recommend it.

I had a chilli spicy one if memory serves, bloody lovely, even after a few pints at which point I was gagging for food, it was clear this was not an average burger :)

Shame its not slightly bigger really, but then maybe thats part of the charm

I just mentioned this thread to one of my sons who qualified at Westminster Catering College and he told me the best burgers he has tasted are made to order on a stall on the Chichester By Pass from the A27 to Goodwood. He thinks its called Souls or similar,. I am going to try Burger Bros on the way to the Leeds game that is assuming they are open during the afternoon.

Troll's Pantry don't at the arches, but do at The Druid's Arms. Their chips are ok in my experience.

Burger Brothers don't at all, but you can get fancy crisps I think.

Should have been clearer.

It would appear that neither will fit the bill for the Leeds game as I want a meal as wife is on a chemo that day so wont be eating until the evening if she eats at all and I shall have to eat before the game.

I had a Patriot Burger in Brewdog on Friday. Not sure if the 5 pints I drank beforehand had some say in the matter, but it was bloody fantastic!

It's the same sort of thing with Italian food. The number of established Italian dining chains is incredible (and still growing), and yet, what is a pizza or pasta dish that you can't find in your local takeaway or cook yourself in 15 minutes flat at home?

I would never go into an Italian and order a pizza but if the mood takes me I will have a pasta dish. Pizza comes under the same category to me as a burger a snack for take away or during the evening while watching TV

Don't go there. Homemade pizza cooked in 90 seconds? I bought one of these.

I have a sourdough starter in the fridge and this little oven can, cook a pizza in 90 seconds, with just one turn. Unfortunately it didn't arrive until the end of the summer and I need more time to practice. Prep time far exceeds cooking time, short cuts are available, but then you may as well not bother.

Problem number one soft wood kindling doesn't get hot enough. So first attempt I had to revert to gas and then source some hard wood kindling. (Falmer farm shop stock it).
Problem number two sliding a pizza off the paddle into the oven is a lot harder than it looks. I am going to need plenty more practice, before I can master restaurant quality pizza at home.
Problem number three even with a wood burner, I am not going to be hanging around cooking outside this time of year, this is going to have to wait for better weather.

No, it's smaller in the hope that you will buy another one.
