[Food] 'On the turn' meals

It's come up quite often on NSC, but there's a few of us for whom throwing away food is the ultimate sin. (An early lifetime of 'you can't waste that, there's people in the world would be glad of that' etc) If you're not from a certain generation, you probably don't understand, I apologise.

So each morning, if myself and Mrs Wz don't 'have plans' or she hasn't informed me of such plans  , I look in the fridge to see what is 'on the turn' and come up with a meal.

So, this morning there's a big box of portobello mushrooms, looking a bit sweaty and half a tub of sour cream, probably getting sourer by the day. A couple of chicken thighs out the freezer, add some onion and fresh Sage, stick sourcream mash on the top and it was delicious.

Recipes with at least two things 'on the turn' please ?

Raw fish and rice. Great with some soy and wasabi. What could possibly go wrong?

If you don’t like fish then steak tartare 👍

I do think there is a point between 'ripe' and 'dodgy stomach' that's absolutely delicious

I still feel guilty about persuading my son to share a plate of shellfish at lunchtime somewhere in the med 15 years ago. He made it off the toilet about two days later as I explained that maybe his stomach wasn't mature enough for it

I think he knew then, and he definitely knows now as he keeps reminding me

We hate throwing food away to try and reduce waste we plan all our meals a week ahead based upon what we have and then only buy what we need

I do that, but then Mrs Wz comes home saying I fancied a bit of salmon tonight and bought a huge tub of sour cream to go with it, of which she'll use 3 teaspoons full

Anyone who throws away cauliflower / broccoli which is merely looking a little sorry for itself rather than making a cauliflower / broccoli cheese out of it deserves prison

Fair play to those intrepid and inventive ‘anti-wasters’ on here. Although my parents were very much of the same ilk, I have to say I am the complete opposite and have absolutely no qualms or guilty conscience about lobbing out food that’s even a bit iffy.

I just don’t have the time, inclination, imagination or risk-appetite to use ingredients that come with the associated jeopardy of spending the next 3 days running to the bog to squit liquid that looks like it’s been drained from a rusty radiator.

Given the relative abundance of everything, I just don’t get the slightly masochistic attraction of living like it’s still post-war Britain.

Growing up with a single mother who had to work multiple jobs to keep food on the table, throwing away food is a huge NO for me.

Like the OP I try keep on top of dates, even putting post-it notes on the fridge door for items I know need to be used in the coming days. Saying that, sometimes work gets in the way and luckily for me there is a community food pantry and fridge two blocks from me where I can take produce that I might not get to. It doesn’t hang around long so there is always someone who will take what i can’t use.

Tonight, a pack of smoked salmon that had a 21 August use date (it passed the sniff test) and some bread and Philly cheese that had separated (till I rejoined it).

Delicious.

(Ms T just reminded me something something something toilet brush. Whatevers.)

(I regard it as a violation of the human contract to buy food and chuck it out.)

Have you seen the price of cheese? Shame to waste it on an a manky cauliflower.
Don’t waste the good cheese, use some supermarket stuff and stick some cayenne pepper and mustard powder in the sauce to add some flavour

Oh, and if you peel/scrape off the blue or fluffy bits, almost anything sad can be purified in a hot stir fry, and reanimated with sweet chilli sauce.

For me, I never knew the make do and mend, that was my Dad’s gen.

Instead, I think it’s from me just hating waste now in 2024, I’m fairly eco conscious (to an extent, with some double standards).

I don’t eat any of that shit, as a kid I fuckin starved during the 70s when I lived in Birdham Road, I lived in Broadfied in Crawley in the early 80s and a decent breakfast there was a horse shit sandwich. If it’s past the date, it goes in the Vera Lynn. I’m a Peacehavener now, if we’re hungry we go down the carvery

How soon is now?
I got given some sausages that it turns out we’re out of date(I didn’t even think to look). 2 bites in and they didn’t taste right. Straight in the bin, but it was too late. A couple of hours later I shat myself inside out, whilst vomiting into a bucket. Bedridden for 24 hours. I hate throwing food away, but won’t take any chances with out of date meat or fish
