INGREDIENTS 4 SERVINGS
8 - 10 each fresh eggs
1/4 cup milk
to season salt
to season fresh ground black pepper
as needed cooking oil
2/3 cup monterrey Jack cheese, shredded
1/2 cup cheddar cheese, shredded
For the stir-fry filling:
2 tsp. cooking oil
1/2 cup onion, thinly sliced
1/2 cup mushrooms, sliced
1 cup turkey breast, cooked, sliced
1 cup frozen stir-fry vegetable mix, thawed and drained
1/4 cup scallions, minced
1 tsp. soy sauce to season fresh ground black pepper
METHOD
1. Beat eggs with milk. Season with salt and fresh ground black pepper, reserve. Heat sauté pan or wok with cooking oil over medium high heat. Add onions and mushrooms, sauté until tender. Add turkey and stir-fry vegetable mix. Season with soy sauce and fresh ground pepper. Sauté until heated through, reserve.
2. Heat a non- stick omelette pan with a small amount of oil. Portion beaten egg into to pan and cook until eggs are almost set. Carefully turn omelette over in pan. Cook until eggs are firm and set. Top with cheeses. Portion stir-fry mixture into center of omelette and turn out onto serving plate folding in half. Top with additional cheese and serve.
