Apparently there is no "right" way to cook it. It varies from region to region throughout France. Saw one of those tv chef type programmes with Rick Stein recently where he was travelling through France on a barge sampling cassoulet at all the different villages en route. All were different, but looked equally yum.
afters said:cassoulet comes from castelnaudry and the toulousse area of the south-west, and nowhere else. there are big differences around that region but anywhere else in france it's about as authentic as irish cheddar cheese
