Chukwuemeka is a 19 year old who they signed less than a year ago. Why would they be offloading him already?

Could be for a number of reasons.

Main one is he doesn’t suit the new managers plans and the other players brought in who can play his position.

Especially if Poch wants to bring in more new cm options for next season. If there’s not a pathway, and given their FFP why not cash in now if you can make a few m profit or it helps you obtain your main target.
