This is really, really, really tough to narrow it down to 5.
Here goes though:

Steve Vai - Passion & Warfare
Pink Floyd - Dark Side Of The Moon
Sheryl Crow - Sheryl Crow
Led Zeppelin - Remasters
Frank Zappa - Joe's Garage

It took me ages to narrow these down from about 25.
And I'm taking albums for greater variety.

YES!! Zappa and Zeppelin 2 of the greatest, not as keen on an Steve Vai as some people, technically a good guitarist but a bit corny.
