I haven't heard the word by itself used in this way, only when prefixed by the word 'Jungle'. I though that had died out in the playgrounds of Britain in the 1990s.

Edit: as above, a quick Google suggests 'Jungle bunny' for black women or perhaps even more popular in the modern idiom 'Snow bunny' for white women, but not 'Bunny' by itself.

And you’ve explained the nickname was because she likes carrots so it is not one bit racist - here is where a big part of the problem lies for me - everyone’s looking for racism that ISNT THERE! She obviously wants it so no drama to see here.
