Just an observation Nigella, don't use Maldon Sea Salt for a brine. What a complete waste of money.

Straight from the Nigel Slater school of "it's Friday lunchtime and you know you have to use up that leftover Vennison and half an organic crossaint that sitting in the fridge."

Good shout that , if it works well it will free up the oven for all the additional stuff, possibly a game changer.
Did you do a dry run?
I'm doing mine tomorrow. Brine already done.

Done and definitely doing again Xmas day. Done on the rotisserie, approx 2 hours. Very very tasty. I will turn the burner down slightly next time to not over do the legs but other than that, all good.
