Want to do something with scallops. Saw a nice recipe this week, which will test this weekend. Ginger, Leek and Carrot very thinly sliced, blanched. Soy sauce mixed, into shell with sliced scallops inside. Shell on top, seal with a puff pastry trim, and place in oven. Butter sauce when serving! Looked delicious.

Smoked salmon, horseradish and beetroot creme fraiche, pea shoots, lemon juice and black pepper all served on some wonderful buttered brown bread.
