Stag do ideas in Santa Ponsa

I've got a stag do to organise for my best man. I'm keen to not repeat the usual formula he rolled out for mine (matching t-shirts/fancy dress, activities, etc) but he's very keen to go to Santa Ponsa to no doubt repeat it.

So come on NSC, what brilliant things have you encountered on a stag? Or is the matching t-shirt a rite of passage despite us all being in our late 30's?

To be honest if a lifelong friend asked me to organise or attend that type of stag with the t shirts etc I would find a bloody good and feasible reason not to go.
I have been on many stags to the Med and had a great time but luckily no fancy dress.
