I recently picked up a copy of Liege and Lief by Fairport Convention and was taken with their version of Matty Groves, as it does one of my favourite things in music (If done well). The song is done by 4:30, but they wig out on an extended jam ending that makes the song nearly twice as long:

The Field Mice are done singing by 2:30 but refuse to give up until they get to 5:04:

And of course the finest four minutes+ of the Stone Roses' career starts at 3:40 after all the singing is over:

Any other suggestions?

Walk on by.
The stranglers.

Great extended instrumental break, but the singing comes back before it finishes, so its more of an integral part of the song than a desire not to stop because the band are enjoying it so much.

In Ragged Glory by Neil he puts his guitar down at the end of each track while it's feed backing and wastes (?) many seconds, he always was tight with his minutes.
