seeing as Southern website doesn't clearly tell you, if I buy a Off Peak return from Worthing to London, and travel up at 8pm on a Thursday evening, then travel back at 7am on the following Friday, is that OK on an Off Peak? Am I right in saying the peak only occurs TO London, and not FROM?

I thought its the time your train arrives at its destination. Trains from Downham Market arriving at Kings Cross before 10 are peak and after 10 off peak. Best check before travel. Ticket staff at a station is your best bet.

No you are not able to make your return journey at that time of day as the ticket you are buying is a saver return and is only valid to start your journey after 09.30 am Monday-Friday .

you can probably get an open return that covers two days of travel cheaper than two singles. you may get one of these as a saver. either way, traveling before 9:30am is always considered peak, and theres some more transient rules around peak time in the evening (8pm would be after though).
