Just wondering if you put a slice of mature cheddar on toast with a slice of mild would it be the same as having two slices of medium cheddar on the toast?

In this situation I would grate the cheeses and mix them before introducing to the toast in order to achieve a more evenly distributed flavour. Could be a problem if the cheese is pre-sliced though.
