Excuse my ignorance but a passenger aeroplane making an unusual amount of noise (presumably because it was low) went over Hurstpierpoint at about 3. Would that have been it?

Yep. Slightly before 3 but that was it. Very loud coming over Brighton.

China Air flight is on the runway at Gatwick atm, so i guess until it's evacuted and then moved away from there and when it's finally safe for other planes to land, the other planes will continue to circle.
