Chicken Carcass



One for the foodies out there, TLO especially, please.

I have just taken the breasts off a chicken and removed the leg/thighs, I know that some of the best meat is still attached to the carcass (the oysters) but how the bejesus do you get them off without boiling or roasting whats left.

And what would you do with them once removed?

Ta.

You could break up the carcass and boil in a pot, use the small pieces of chicken to make a soup and sieve the stock and freeze for another time.

2 carve the oysters out whilst still uncooked you can actually remove them with the leg as one cut.

Then cut them free from the leg if you still want them seperate.
