My preferred recipe for the countryside charmer..keep the damp out with:

1 pint Gin
8oz sloes (picked carefully and then pricked with a silver pin for good luck)
7 oz of castor sugar
1 clove (optional)

Bottle and leave for at least two months. Shake bottle occasionally. Best bottle to use is is a litre bottle of gin. Sainsbury's own cheap brand is quite good.

Result: Christmas Joy

Although sloe gin does taste nice, gin does too so it's a bit of an expensive product. It's a lot cheaper to make wine with the sloes for about one tenth of the price.

No you can double up the enjoyment by draining off the gin after how long you want to mature it, and replace it in the sloes botle with a really rough (Italian or Algerian is good) red wine. This then turns into a fortified wine akin the port. Have just decanted some from earlier this year, delicious!

Damson gin is even better than sloe gin but am struggling to find some damsons this year sadly. I trekked all the way over to Kent today but couldn't find any by the roadside. Got a load of apples and pears though..
