This explains it quite well. The old staples are typically unrefined......it's the nutritional quality, and quantity (both in terms of % of modern diet, and portion size) of this stuff that's the issue...
For me, 'anti carbohydrate' is too strong. It's more about the massive amount of refined carbs consumed which I think is the primary cause of obesity. Balanced, healthy diet will contain carbs.....

Type of food eaten as well as amount is a major contributory factor I reckon - way too much refined carbohydrate. Body can only store 2 hours worth of glycogen, the rest gets stored as fat. Reduce potatoes, pasta, bread and sugar.....
