True. The chef at Vine Street Cin Cin when I was a regular was Irish! That said, he was excellent and I would often talk to him for tips and inspiration...he certainly knew his way around Italian ingredients and flavours. He could also make pasta about 20 times quicker than me and sometimes...
It does raise a question about what authentic means. There was a chef (maybe a food critic) who said something like if you ask 10 locals for an authentic recipe you will get 10 different recipes.
One criticism I have heard about Cin Cin is that the portions are not big. Personally I have not felt this; it's not a pile-it-high type of restaurant. This is easily remedied by having two starters....which I always do in such places.
