It's a phenomenal city, but I can understand why you think that. It isn't the same as it was 10 years ago and the mayor is trying to change it into London-lite. Still some lovely cities in NL mind you.
Utrecht, Leiden, Delft, The Hague, Zaandam and even Rotterdam are all great cities to visit too.
Very safe. Worst that'll happen is pickpocketing but even that's rare these days. Or get hit by a bike if you don't treat the bike path like a second road.

The train is easy, go through passport control, buy a ticket and it's underneath the airport. You'll be at Amsterdam Centraal within 15 minutes and your hotel is about a 5 minute walk from the station.
