Same. I'll always cook more than is needed so I've got stuff for the next day either to heat and eat or to be revamped into a new dish. Leftover cold rice becomes fried rice the next day. Extra spaghetti becomes a frittata di pasta.
Saves on bills and time.
It would've been aubergine curry with brown rice but, alas no. Just a bowl of gazpacho as I went to the dentist this morning and was told to avoid chewing anything until this evening.
