Mostly Cantonese I believe.
I accidentally went to an authentic Chinese restaurant once in Birmingham, most people were cooking their own stuff in the middle of the table and there was an abundance of intestines on the menu!
Rick Stein covered this really well in his India series.
He asked the question to everyone he met and the Indians couldn't agree what "curry" was or where the word originated from.
The menu in most "Indian" restaurants is Bangladeshi food anyway. There's lots of ignorance around this subject...
