Obvious one but take a day trip to Mt Fuji, our one was a coach trip out to a lake where you get a boat out and the view of the mountain is incredible. then the coach takes you half way up mt Fuji, then lunch and a visit on cable car to another smoldering volcano, then back on the bullet train...
