Extra mature cheddar, Camembert , Goats cheese and Stilton.

There will also be St Paulin, Wensleydale and Brie, but seeing as we're limited to four. I'll stick with the essentials.

Applewood smoked, Bavarian smoked, Comte, and Gouda with cumin seeds.

I like a smoked cheese, and love Comte

Gouda with cumin sounds ace, where from ?

Gorgonzola and fresh chunk of parmesan, just stab it and break chunks off.

and a good strong cheddar, although with fine parmesan on tap recently chedar consumption has tailed right off.

We get ours from a cheese stall in the local market (which also sells the comte), but I'd imagine some more, er, upmarket supermarkets sell it (Waitrose?).

Or any cheese shops near you?

My personal cheeseboard would look something like this

Good mature cheddar (just below the point where it takes the skin off the roof of your mouth)
Double Gloucester (with or without onions & chives)
Brie / camembert / both
Boursin
Manchego
Might also be tempted by a spot of Red Leicester
Onion marmalade (M&S)
Cornish wafers / warm crusty bread
Celery
Grapes
Good butter

When I say camembert I obviously mean normal camembert, not breaded camembert as Sainsburys have put on their recommended cheeseboard items

Yes, Ritz and a salty cracker, normally buy from a deli, can't remember the name. No butter, takes away from the taste of both the cheese and Port in my opinion!

For me, cheddar has no place on an Xmas cheeseboard. Nor does anything with bits of fruit or chilli in it, though Mrs MBH loves all that so I'll play ball.

My ideal would be a comte, a devastating blue and, of course, a Burwash Rose - the finest cheese in the entire universe.

Primula cheese with ham

Laughing Cow

A mild cheddar

Babybel

You're missing the Christmas cheeseboard classic! Couple of these with a nice port, can't go wrong. cheese-sandwich-singles-11443063.jpg

I'll be having an aged manchego, something blue, something soft, perhaps something goaty.

What port will you be serving? Ive got a bottle of Kopke LBV to go with mine. Also a Ruby and a Tawny in reserve.
