I still don't fully understand what I have to do
Have you not been following it?
By the end of the selection process you have to have a full XI team and manager, with each of them fitting into one category. So one player has to have had 70 international cap, one never to have played in a World Cup, one to have played Brighton and so on. You can't have the same player/manager as anyone else and have to have a sensible formation. You now get to pick 2 players who you want in your side.

I'm now beginning to understand just how tough this will be by the time of the last pick. I currently only have two players who've not already been grabbed left...nightmare!

I am sad and have a running list going in a spreadsheet
I am pretty much as sad - I'm using Word rather than a spreadsheet to just give a straightforward list of those picked, but the effect is much the same.
