Any views on coleslaw in a toasted sandwich? I'm thinking of keeping it simple and pairing it with a nice mature cheddar.

Ah, down the old toasted sandwich route then.

In which case, you can't really beat ham, mature cheddar and lashings of English mustard.

a) You're a vegetarian.
b) You have a pot of impulse purchase coleslaw to use up.

I used one of the many hot sauces I have knocking about and it was an absolute triumph.

Now I want a second one...

Two points have not been covered here yet.

1. Grate the onion. The resultant slush provides a fair amount of binding goop and the astringent edge required.
2. A tiny scattering of lightly toasted Caraway seed.

I douse my breakfast coleslaw on toast with sriracha. Works beautifully.
