Well. Heston (for it is he) claimed in that article I just quoted that he boils the chopped spuds first, then takes them out to cool. Then deep fries them, before taking them out and putting them in the freezer. Then deep fries them once more. Something- as you say- to do with the structure, cracks & fluffy edges making for better chips. So he says.

Whilst I wouldn't want to claim he's a big fat liar, of course, the chap in the programme stated they'd been doing this for generations, and I think Mr B may have been a little too young to trump that statement?

This. Together with steak & gristle pies, and mugs of Bovril.

As much as I love a pint of Harvey's, the occassional Piglet's or Pukka Pie, and other such fare you can't beat a cup of beef tea!

Food and beer top notch too.

Shame about the footie.
