Civilizations is working well so far for me. There was an interesting article which argued that, far more than its predecessor Kenneth Clark's Civilization, the major influence on this series is John Berger's Ways of Seeing, which is also well worth a look (as is the book).
The best documentary I've seen of late is Ken Burns' ten-parter Vietnam. It's masterful. I think he's also done series on the American Civil War and jazz, both of which I'm keen to indulge in.
