It is expensive, and there are more imaginative restaurants in Brighton, but if you go on a Monday, when they have a £5 corkage offer, it works out much better value, especially if you're drinking fancy stuff.
I consider myself suitably admonished, and will attempt to refrain from being so dogmatic in the future :wink:

Can I also mention Fourth & Church, for those that drinking good wine cheaply is important. They have about a quarter or third of Butlers' range, and will charge you just £10 on top to drink in. That does make the £75 bottle set you back £85.
Go to The Sportsman. Last time, we were in there for over five hours, eating for the vast majority of it (c13 courses). Very decent wine, c1.5 bottles a head. £270.
You could do worse than either of the two suggestions made by Springal. Silo, Isaacs and 64 Degrees also fit that particular bill. All aren't cheap, and you might struggle to get a table with a week's notice.
Not so sure I'm that well-placed to judge, as what Michelin want and what I want don't always overlap. They like stuffiness, and I like informality. They often like intrusive service, whereas I loathe it. I suspect my food tastes are more ingredient-led, rather than technically-focused too. I...
It's great, although not really a restaurant, more a hybrid thing. The good news is that it's a collaboration with Butlers, they stock about a quarter of their wines and put just £10 on the shelf prices to drink the wine on site.
It's more of a joint venture. They have about a quarter to a third of their selection, and sell Butler's wines retail, as well as whacking on a tenner to the retail price for anyone that wants to drink a bottle on-site. Iow, best value wine list in town, by a considerable distance.
They do something remarkable. They do simple dishes -- almost home-cooked, traditional style dishes -- but execute them to such a high standard. If you want a decent red, the Marcillac they sell goes for at or less than £30 and is really good.
