If you're ever in my neck of the woods, you can visit the film sets where the Dollars trilogy, amongst other spaghetti westerns, were filmed. Some of the sets have been jazzed up a bit with Can Can shows and shoot-outs. Others are just preserved as sleepy wild west towns.

Big fan of Yellowstone, Beth and Rip are two of my all time favourite TV characters.
As for western movies I remember absolutely loving Young Guns when it came out.

Most of my favourites are already mentioned (True Grit the remake, The Man who shot Liberty Valance, Hostiles, Josey). Pale Rider is also a good 'un plus the Good, the Bad and the Ugly.

Was always fairly 'meh' on westerns.

And then along came 'The English' and showed America how it should be done.

Stunning series.

High Noon is simply one of the greatest films ever made, let alone westerns. Brilliant plot, brilliant acting. Love that film.

Seven brides for seven brothers I find marvelous though epically sexist.

I'm down with MOH and High Noon. What a cracker.
I'd recommend the films of Budd Boetticher. Brief, just and vivid portrayals of the unpeopled spaces of the lawless west.
